Raspberry Jam Coconut Slice from Katie in Australia


2 cups plain flour 1 cup sugar ½ cup butter, chilled, cubed 3 eggs 1 teaspoon vanilla extract ¾ cup raspberry jam 2 cups coconut flakes Preheat oven to 350 F. Grease and line a 9 x 13. Process flour, ½ cup sugar and butter to resemble breadcrumbs. Add 1 egg and vanilla. Process to form a dough. Press dough into base of prepared pan. Bake for 15 to 20 minutes, or until light golden. Spread jam over warm base. Whisk remaining eggs and remaining ½ cup sugar together. Stir in coconut. Spread over jam. Bake for 25 minutes, or until golden. Cool completely in pan. Cut into pieces. Serve.




Makes a lot of oooey gooey bars!Oatmeal Carmelata'sCrust: 2 cups flour 2 cups quick oats 1 tsp soda 1-1/2 cup firm packed brown sugar 1/2 tsp salt 1 1/4 cup butter, softened (NOT margarine!) Combine crust ingredients and press 1/2 of the mixture (about 3 cups) into a 9X13 pan. Bake for 10 minutes at 350 degrees. Filling: 12 oz pkg chocolate chips 1/2 c chopped walnuts 12 oz Mrs. Richardson's butterscotch caramel (Yes, Mrs. Richardson's is best!) Sprinkle warm crust with chips, nuts and caramel. Sprinkle remainder of crust mixture on top. Now bake 18 - 22 minutes at 350 degrees.


Scotcheroos, a family favorite my grandma used to make for all our gatherings! 1 cup corn syrup 1 cup sugar 1 cup peanut butter Cook the above ingredients over medium heat until the mixture boils. Mix in 7 cups Rice Crispies. Press mixture into a buttered 9X13 pan and set aside. In a saucepan, melt a 6 oz. package of semi sweet chocolate chips and a 6 oz package of butterscotch chips. Pour on top of the Rice Crispies. Let it sit for about 4 hours or until topping has hardened. Cut into squares and enjoy




 Apple-Pear Crumble Pie This is one of myfavorite deserts, and it doesn't even have chocolate, it's that good! I love to find recipes like thisone from Kraft Foods in magazines and give them to my sister who cooks. She likes the challenge and I LOVE the results! I haven't picked a bad one yet!
